Kenex Holdings, a Chicago-based investment holding company, has acquired Bubbies Homemade Ice Cream & Desserts, an Aiea, Hawaii-based manufacturer of premium mochi ice cream founded in 1985. Founder Keith Robbins will remain a significant investor as Kenex backs the company’s next phase of growth, and Rick Schaffer has been hired to join Bubbies as CEO. Financial terms were not disclosed.
